How to Make Kokis (Step-by-Step)
1?? Prepare the Rice Flour
- If using raw rice, wash well, dry completely, and grind into a fine flour
- Sieve the flour to ensure a smooth batter
2?? Prepare the Batter
- In a bowl, mix rice flour, salt, sugar (if using), and turmeric
- Gradually add thick coconut milk while mixing
- Whisk until you get a smooth batter, slightly thinner than pancake batter
- Rest the batter for about 30–45 minutes for best results
3?? Heat the Oil
- Heat oil in a deep pan on medium heat
- Place the Kokis mold in the oil and heat it well (this is very important)
4?? Shape the Kokis
- Remove the hot mold from oil and dip it into the batter
- (Do not let batter cover the top of the mold)
- Immediately place the mold back into hot oil
5?? Frying
- Fry until the Kokis releases itself from the mold
- Gently turn and fry until light golden and crispy
- Remove and drain excess oil on paper towels
